If you want to project a differentiation to recruiters, the B Tech project you have done is a major tool to prove that. It is thus essential that you undertake meaningful projects and do it well. Here is a list of projects one can do that uses microprocessors. It is really a long list of meaningful projects.

11. 2 channel  oscilloscope based on a PC
12. Parallel port testing & programming through microprocessors/controllers

These are just a dozen idea, the list has many more. You can even come up with some variations and get even more ideas!
